“We know there’s a correlation between non-medical [vaccine] exemptions and vaccine-preventable outbreaks in certain geographies and neighborhoods and schools,” Lakshmanan said. “In the past, I’d say 13 to 14 years [ago], the number of non-medical exemptions has increased 19 times…if you take one step back and look at the research that these non-medical exemptions cluster, that’s what we’re really, really concerned about.”

"And what's the best way to approach someone who is resistant to take a class, but to cast it in such a way that it's something that they do anyway," he said. "And that's the great thing about molecular gastronomy and this cooking experience -- the fact that we all cook. We go into our kitchen and we're not scared to walk into our kitchen. We're not going 'oh no, I'm going to do chemistry today.' But you ask a student to go to a chemistry laboratory and somebody who's not necessarily a scientist will say, 'oh no no no, I can't do that.'"
